Salt Harvest at Populus Hotel
Experience Dining & Entertainment
JTM Construction built Salt Harvest, the signature restaurant at the Populus Hotel, delivering a warm and contemporary dining environment that reflects the property's modern design aesthetic. The project transformed the hotel's primary dining space with custom millwork, stone surfaces, decorative tile, and tailored lighting to create a refined yet inviting atmosphere. The scope included a full commercial kitchen buildout with upgraded mechanical, electrical, and plumbing systems, installation of high-capacity cooking equipment, and integration of service areas to support a premier food and beverage program. Construction was closely coordinated with the hotel's overall schedule, requiring phased work, material staging in tight urban conditions, and seamless integration with adjacent public spaces. Salt Harvest now anchors the Populus culinary experience, offering guests and locals an exceptional dining option in the heart of Seattle.
